Simple Foods





This cookbook is an attempt to capture the tastes and flavors of the simple foods that can both sustain life in lean times and be enjoyed today.


Many of these dishes were perfected in the kitchens of the world’s poor, past and present.  These dishes rely heavily on cheap grains, beans, and dried peas and mostly exclude the more expensive and perishable items like milk, meat, eggs, and fresh produce.  Not surprisingly these dishes work well with foods that we commonly store against our own lean times.


Ironically, these dishes that belong to the poor are now being rediscovered by high end restaurants in New York where well-heeled diners experience the novelty of “peasant foods” making these simple foods truly universal.  --Michael Halls
